I’m pretty proud of this because it’s unique

I was walking through the grocery store during my lunch break because it had AC and I still wanted to get some steps in, and I stumbled upon a rack of discounted beef back ribs.

Picked them up, put them in my work fridge, grabbed them on my way home and raced to set up my Ninja Woodfire Outdoor grill, because I had 40 minutes until the Mrs came home, and I didn’t have time to properly smoke them.

But what I COULD do was air fry them for 35 minutes at 375 WITH the smoker setting turned on, effectively putting smoke on them while they air fried.

The air fryer turned the fat nice and crispy, and the meat came off the bone well enough. It wasn’t melt in your mouth tender, but I’ll take 35 minute ribs.

Paired them with scrambled eggs, cooked in beef tallow. And I took all the leftover rendered fat from the ribs and stored it as tallow, which now has a delicious smokey flavor.

unfortunately not, I figured it would be better to practice with less nice knives

I would tend to agree.

Less knives means you may not always be using the correct knife for the task at hand. If funds permit I would def consider a 8-10” chef, pairing, 6” utility and a fillet.
I use the utility more than anything else.

I currently have a cuisinart 8in and paring. Ordered a pair of fillet knives, but am considering returning bc the handles are too thick for me. Seems like they were designed for men who go fishing
