A Christmas package from my brother, from Pennsylvania Macaroni in the strip.

So, all told- 5lb. roll of hot sausage, 2lbs of Isaly’s chipped ham & bbq sauce, hot peppers, sweet peppers and 2 lbs. of pierogis. :yum:

I’m still not a photographer but here’s a venison breakfast burger.

  • White tail I shot a couple weeks ago
  • Salt Lick Dry Rub- commercially available seasoning from a famous bbq spot. Lots of salt and some spice
  • 2 slices of havarti cheese (compliments white tail flavor well)
  • Fried egg
  • A fig jam spread mixed with stone ground mustard (fig also compliments white tail)
  • Baby greens
  • Potato bun

Delicious. Will add bacon to the next one.

I’m really kind of an amateur though. I can take my time and make nice because I only do little batches for holidays and stuff.

My first real go at Beef Back Ribs on the smoker.

I pulled them off a little too early, but temps were getting a little weird on me and family needed to it.

That’s the “Playboy” photo. This one is the Hustler

I managed to get the whole rack on one plate, with 5 sunny side up eggs, and was all set to capture it…then one of the ribs fell into the eggs, which is why I have a broken yolk and some on the rib…which makes a WONDERFUL sauce

That looks amazing.

Smoked chucks are delicious sliced but make my favorite chopped beef. I think the texture gives them an edge over brisket in that regard.
