93/7 ground beef, 3 slices of the big pepperoni, 2 slices of provolone. Pepperoni crisped up with the burger, then stacked on top for the cheese melt.
Bread is Cellone’s, a local favorite, with a couple teaspoons of tomato sauce, & a little basil.

This all looks wonderful! I do have to admit that I’m having a hard time figuring out how the gougere and the espresso mousse work together, though each on their own sounds lovely. I’m guessing the mousse isn’t very sweet and you’re going for a bagel/coffee type effect?
Yep! I used 70% chocolate, 1/2 a packet of instant coffee and no extra sugar
