Homemade roast beef has been a frequent staple recently.
Most people on here would know I cherish my strip steaks and ribeyes, but a properly cooked eye of round roast, edge-to-edge medium rare, is a thing of beauty.
I rub it with a mixture of mayo, dijon (Grey Poupon), Worcestershire, soy sauce, a dash of fish sauce, and ground black pepper. Then I tie it up with a couple pieces of twine.
Then, it goes in to a 500 degree oven (I put it on a shallow wire rack in a roasting pan, and use the convection setting) for 5 minutes/lb (a 3 lb roast would be 15 minutes), and then cut the stove off. Don’t open the stove or even crack it - just leave it and set a timer for an hour. Looks like this every time.

Costco Canned check breasts, Mr Tortilla 1 carb tortillas, “Amazing Grass” greens supplement, salsa, and some red pepper flakes I stole from an airport dinning stop, with fat free greek yogurt as sour cream
For dessert
Fat free greek yogurt, mixed with Nuts n More spread, powdered peanut butter and a broken up IQ Keto bar (microwaved to make melty)

someone ask in the comment section what setting they used for this chicken in the oven, bake or roast and thermo works responded with bake.
Here in Germany we have heat from the top and from the bottom and a convection setting!? When they give oven temperature suggestions in general what setting did they mean and what are the correct definitions for my german settings? Thank you very much your valuable time and help
As I’m guessing heat from the top = broil, use either heat from the bottom or convection (which just means heat from the bottom + an internal fan circulating the hot air).
Convection will cook a bit faster

I should have gotten a photo of the inside, but this was carne asada, bacon, eggs, sour cream and cheese, and oh my god 3 years of waiting was totally worth it.
