I agree with this. I’m 5’4" and even 125 is heavy for me. One of the primary ways girls her age seek attention/reveal body image insecurity is to attempt disordered eating and then cover it up with a label like veganism or fasting or cleansing. And teenage girls tend to think that eating a steak or chicken breast or any other piece of an animal will instantly make them fat. It sounds like she is extremely insecure in this area.
I’d get her in the gym or playing sports and her body will quickly require her to eat better, if she’s willing to listen to it. This may help her to make the switch from seeing some foods as “bad” to seeing it as necessary fuel. It will also help her build her self esteem. That was the only thing that truly fixed my poor eating habits.
To echo what some have already said, beans, lentils, and so forth will help her out a lot, if she really insists on going veggie; shakes; I forgot if she is willing to eat dairy but cottage cheese and yogurt too (I eat Light 'n Fit).
Tell her to stop being so picky and learn to try new foods more than once and how prepare them in a variety of ways, and that it can be fun. Food is to be enjoyed, not to torture yourself with. (Local grocery stores often have free culinary classes, you could offer to attend one with her.) Plain fish can be made pretty damn tasty with salsa, spices or stuffing. If she doesn’t like salt water fish, have her try fresh, as the taste is milder. I agree that she is being a brat but part of this is probably due to a lack of nutritional education and poor self image. I’ve been there myself.

Vegetarianism is no joke. It’s a disease.
Does she cook her own food? I would get her a vege recipie book and tell her to spend a weekend cooking. It’ll get her more connected with food, if that makes any sense.
Also get her some books, “Wasted” by Mayra Hornbacher will show her what it’s really like to have an ED.
Make it her problem to fix, for herself. Just giving her a diet to follow isn’t going to nip it in the bud.
I can think of a pretty good liquid source of protein you could give her. It might shut her up too

This is excellent advice. It can take some coaxing to convince girls that age that food can be a friend and not an enemy, but if they can make the switch, it’s an enormous step.
This girl is anorexic. I know cause I lived with one for 20 years. If you can possibly convince her that eating fat doesn’t make you fat(have her google GARY TAUBES), get her to drink a gallon of WHOLE milk per day, eat cashews, sunflower seeds, peanuts, cheese, beans with a small amount of rice to make a complete protein, as much cottage cheese before bed as possible (I add cinnamon and almonds to make it digest even slower).
Also add B12 and especially creatine, which has been shown to increase memory in vegetarians by about 30%, showing how deficient we are in it. Yes, I am a vegetarian and I have to eat pretty much all the time to get enough protein to make progress in training. I do also eat 4-6 eggs every day and take fish oil, as you just can’t get good omega 3’s from any other source. Make sure she is taking about 3 fish oil capsules with every meal.

I don’t know about you guys, but drinking a lot of milk gives me acne, and if this happens to her, chances are she’ll probably stop and diet regime you put her on.
