I dont feel old, till I get on here sometimes and the kids get restless. Well plus the grandchild screaming upstairs as I look at video games on IGN and post on here. So I am old and weird. :confused:

Basically a recipe like that would be as simple as cooking the pasta noodles, then melting various cheeses in a pan and pour over the noodles.

The thing that gives it a kick is the type of cheeses you pick. Some of the ones I like are Parmigiano Reggiano, Pecorino Romano, and Gorgonzola. You could literally grate the cheese over the noodles while stirring and the heat from the cooked pasta noodles will melt the cheese. Salt and Pepper to taste and voila, you’re done. If you want a little kick, add some red pepper flakes.

Special note about those cheeses, they have some of the lowest fat since many are made from sheep.

For Carbonara, add some cooked pancetta (cooked smoked bacon) and 1 whole egg per person being served and stir like a mo’fo. This stirring (which you REALLY need to do intensely) will beat the egg (so you don’t have an omelette in the middle of your pasta dish.) Add some fresh cracked pepper and you’re eating like royalty.

I have a theory about food. The tastier it is, the less of it you need to feel satisfied. I think that is why I always eat less when I got back to Rome and see the fam. A small plate of pasta and I am set (until the buffet of everything else comes.)
