Smaller beets are better,

  1. Roast roots
    Chop them into slightly larger than bite sized pieces, (along with squash & root veggies.)
    add lots of minced ginger & chopped garlic (maybe thyme, too). toss in some olive oil, roast @ 400 to 425 for about 1/2 hour. (poke them with a fork to test for tenderness.

  2. ‘Pickled’ Beet Salad
    chop them, (or slice them into heart shapes) boil in water + 1Tbl vinegar + 1-2 Tbl sugar for about 20-30 mins (again fork-test for tenderness. drain & cool until warm. Add an equal amount of baby bocconcini (or mozzerella). garnish with fresh fennel sprigs. (you can also finely julienne the fennel ‘stems?’ & toss in the salad.

Finished making the beets. I’ve never made them before, and couldn’t really remember the taste. All I did was bake them for an hour then cut them up and add a little salt. They’re good! Also, something that red has got to be good for you.
