You havenāt said much about where you are now compared to where you would like to be. How strong are you right now?
You are tall by most standards and 180lbs is not massive for that height. My questions are strength related:
- How many reps can you bench press 270lbs?
- How many reps can you squat 360lbs?
- How many reps can you deadlift 360lbs?
As you gain weight these lift pounds should also increase.

Is 2 plates 225lbs (a 45lb bar and four 45lb plates)?
Is 2.5 plates 275lbs (a 45lb bar four 45lb plates and two 25lb plates)?

Those will still be low enough that you should be safe from injuring yourself. I have only see one person rupture their pec with less than 405lbs. You still need to concentrate keeping your under grip arm straight when deadlifting 400lbs+.
Now, all that said, considering that you have extremely small wrists, you might also have small tendons. As I mentioned earlier, using AAS your muscular strength will increase much faster than your tendon strength.

The bench press is notorious for being risky of a pec tear. The warning will be relatively minor tears that will spook you a little. Take heed.
The deadlift is another risk for the arm that holds the bar with an under grip (palms out). If you bend your arm (which does absolutely nothing to help with the lift) you are at risk of a biceps tendon rupture. Regrettably there is no warning.
I know Scott curls are not considered compound lifts, but they put the same risk on the biceps tendon that the deadlift does.
Much less likely is a patella tendon rupture squatting. This usually happens when someone is masking pain in order to squat. A friend of mine completely ruptured his in a powerlifting meet. He was injecting lidocane in his tendon to mask the pain. He collapsed with weight in excess of 550lbs on his back when the tendon broke.
