Not worth it in a big city trendy nightclub if you’re working the door because the door comes with too many other perks (if the promoter isn’t taking the “cut line” $$$ smfh). You can make very decent “tip” money just letting people in that are of age or letting them to the front of a long line. No need to fuck with underage drinkers or do anything else that might lose you the door post. In a small city, slower club, I can see doing it though

I’ve worked at this place for 3 years and have been legitimately “tipped” 3 times and I’m always nice to everyone until they think they can talk shit so there’s not money there for that.
My favorite was I caught a guy pissing in a trash can in the bathroom and it cost him $120 to stay haha

I’ve been in dozens of fights over 3 years, even made the local news on one haha. People don’t usually try to fight me personally but like 3/4ths of our staff are just average joe’s and someone of average height/build is not going to be listened to so they get in shit and I have to come clean up the mess, haha.

OP - you have two options:
bars/clubs will do things to distinguish drinks as being alcoholic and non. generally you’ll have mixed drinks in small cups, and if you were to order a plain coke/sprite/cranberry juice you’ll have it served in a beer-sized cup.
go and order a coke or sprite from the bartender. generally they are free, you can tip them a buck or two if you plan on doing it often. then have your over 21 friends buy a corresponding shot or two of alcohol. discreetly, and in an area away from the bar/security, have the shots dumped into your glass. now you will have an alcohlic drink, with whatever corresponding glass/cup/straw combo the club uses to identify non-alcoholic drinks.
use common sense - don’t think you can order a double LIT and think you can walk around w/o security realizing you have a drink in your cup. stick to vodka and clear mixers, or coke-based mixed drinks.

DON’T BE A FUCKING DUMBASS. have your 21+ friends order an extra shot and bring it to you. discreetly take the shot when security isn’t looking. 90% of unders that are kicked out are b/c they are walking around the club with a friggin drink in their hand. take the shot, and then u can walk around with u’re cup of coke.
