Very interesting observation and putting those things together. I never thought of it as the bitter flavor being the cohesive factor there.
I was always under the impression that it was the anthocyanin, water soluble color, found in these vegetables/fruits that created the anitoxidant effect that people were after. I know berries have massive amounts of these pigments.
I know this is also found in other fruits and veggies like, red cabbage, pommegranite, edible flowers, and blood oranges. I’m sure there are lots of others I forgot about too. Think: purple, red, blue.
Of course I guess that’s why JB promotes “eating the rainbow” so you don’t miss any of the micronutrients found in all the colored veggies and fruits.

I think everyone has. Umami is common to asparagus, tomatoes, cheese and meat.
Umami is the taste of glutamate.
