In the mornings I actually mix the eggs and oats in a blender then cook it in a pan to make pancakes. It can actually taste pretty good once you figure out how to cook it. Sometimes I’ll throw in berries in there, bananas are good too. Basically anything you want.
Omlettes are my favorite way to have eggs. Adding veggies makes a huge improvement on the taste and the nutritional value. Eggs by themselves are very bland to me, but add in some garlic, spinach, red onion, scallion, arugula, mushrooms, etc., and you have one tasty meal with a bunch of fiber.
Because it can take some time to chop the veggies, I will chop up a whole bunch at one time and then leave them in the fridge in a ziploc bag. When I want an omlette I can just pull out the bag and they are ready to go in the pan.
