Bacon wrapped watermelon rind. Then you mix the sweet juice of from the rinds and Tiger sauce to glaze them.
I had a pretty good carb up last Saturday. I started the day with Banana Pancakes. Literally, using a ratio of one egg to one banana, blend it up and cook on a griddle like regular pancakes. No other ingredients are needed in the batter.
We saw these cookies on TV and had to make them for carb day. My wife made them and I will just cut and paste Paula Deen’s recipe here:
Ingredients
3 eggs
1 1/4 cups packed light brown sugar (We used dark brown sugar)
1 cup granulated sugar (We used 1 cup of honey instead)
1/2 teaspoon salt
1/2 teaspoon vanilla extract
1 12-ounce jar creamy peanut butter (We used Kroger Natty PB)
1 stick butter, softened
1/2 cup multi-colored chocolate candies (M&Ms!)
1/2 cup chocolate chips (60% Ghiradelli is the way to go)
1/4 cup raisins, optional (gross, leave these out)
2 teaspoons baking soda
4 1/2 cups quick-cooking oatmeal (not instant, we used gluten free oats)
*(We also added shredded, unsweetened coconut)
Directions
Preheat the oven to 350 degrees F. Line cookie sheets with parchment paper or nonstick baking mats.
In a very large mixing bowl, combine the eggs and sugars. Mix well. Add the salt, vanilla, peanut butter, and butter. Mix well. Stir in the chocolate candies, chocolate chips, raisins, if using, baking soda, and oatmeal. Drop by tablespoons 2 inches apart onto the prepared cookie sheets.
Bake for 8 to 10 minutes. Do not overbake. Let stand for about 3 minutes before transferring to wire racks to cool. When cool, store in large resealable plastic bags.

Thanks! I’m still trying to decide what I will eat this Saturday. For my savory food I’m thinking either a huge batch of chicken spaghetti (gluten-free pasta, cheese, rotel, chicken, english peas) or a pasta bake (basically spaghetti and meat sauce mixed with pepperoni, put in a baking dish, covered in cheese, and baked). I might do drop cookies for my sweet (gluten-free oats, peanut butter, cocoa powder, sugar, and I think butter).
Here is how some of my (excessive) carb-up went down this weekend:
I want to do a pasta bake which is essentially where I make spaghetti, mix it with pepperoni, cover in cheese, and bake. Here are all of the ingredients except for the ground meat.
Here are the chopped bell peppers. Not all of this went into the casserole. We use them in our scrambled eggs on low carb days.
I started by simply making spaghetti. I boiled gluten-free rice noodles, browned the meat (ground venison mixed with ground bacon!), and mixed it with onions and peppers that I cooked in EVOO and butter, pepperoni, and the marinara sauce. Then I smashed it down into the biggest casserole dish that I had. It’s not the prettiest thing in the world.
Then I put the cheese on it and bake it until the cheese is melted and the casserole is warmed throughout.
I also made peanut butter chocolate drop cookies. I wanted to take more pictures of the process but my wife was out of the house and my son woke up from his nap. I grew up eating these and I absolutely love them. Here is the recipe that I found on Food Network:
Ingredients
2 cups sugar
4 tablespoons cocoa
1 stick butter
1/2 cup milk
1 cup peanut butter
1 tablespoon vanilla
3 cups oatmeal (gluten-free)
Waxed paper
Directions
In a heavy saucepan bring to a boil, the sugar, cocoa, butter and milk. Let boil for 1 minute then add peanut butter, vanilla and oatmeal. On a sheet of waxed paper, drop mixture by the teaspoonfuls, until cooled and hardened.

My wife made a triple chocolate gluten-free cake for her sister’s birthday on Saturday. It kind of exploded when she got it out of the pan so she had to make another one. So I got to eat the first one! Here is the recipe:
Ingredients
Cake recipe recap:
Chocolate Cake Mix (we used two boxes of gluten-free mix)
Chocolate Instant Pudding (big box)
4 eggs
1 cup sour cream (or mayo!)
¾ cup water
¾ cup oil
1 bag chocolate chips (I prefer Ghiradelli 60% dark)
Instructions
Preheat oven to 350 degrees.
Mix all ingredients well and pour batter into a well-greased bundt pan.
Bake on 2nd to bottom rack for 40-50 minutes.
Remove from oven; let cake cool completely in pan.
Take a small slender spatula and loosen cake around the outside & inside edges.
Tip upside down onto platter.
Cake can be refrigerated & removed prior to serving or tastes just as good chilled.
I also had all three of these Sunday. They’re not bad but they don’t have nearly as much energy as the regular Monsters. They taste similar to the Java Monsters. The vanilla was probably the best.

8/24 and 8/25- Two Day (still moderate, for me) Carb-Up
Saturday:
6 eggs, 1 sausage patty, 2 small GF waffles with strawberry jam
30 pieces of sushi
Kabobs, baked potato casserole, baked beans
Several Handfuls of Nutella trail mix
Several Tbsp Nutella
3 Larabars
Sunday:
6 eggs, sliced and roasted sweet potatoes with peppers and coconut oil
Banana Split
12oz turkey burger patty, sweet potato fries with ketchup and mayo, 1/4 cup chocolate chips
