So, for everyone who’s never baked a loaf of sourdough bread, it really isn’t as complicated as we’re making it out to be hahaha - it’s just, sensitive, is all

It is so much more complicated. If you aren’t in northern California or other select regions of the world, it’s almost futile without a laboratory.

Once local flora gets into the mix it’s really no longer sourdough, and it is virtually impossible to prevent.

Last question- with add ins (dried fruit, garlic, etc) is there a way to prevent the dough around it from being mushy ier?

Worked in a family store growing up. Also a pizza shop.

As for the fruit question, the issue is even dried fruit has a lot of water. Some people dry it out more, but this make little hard bits. My recommendation is to chop the hell out of whatever you are adding and then blot it with a towel. It still makes things a bit soggy, but it’s so spread out and small you don’t notice.

just made my first sourdough pizza dough/crust the other day using unfed/discard I save up. Turned out pretty good, but the bottom didn’t crisp up as much as I would have liked … suggestions??

Internet pseudo-balls really piss me off. Social media gives the opportunity for people to be real nasty to each other in a way that 99.99% of them wouldn’t have the scrote to do in person. Between that and the ability to “prove” any possible stance on any issue with doctored and out-of-context content, we’re really headed backwards.

it’s super easy - I got tired of wasting my discard (or feeding it to my compost pile … which, I’ll be honest, has produced some HYOOOGE worms) so I’ve been saving it in a 64oz container in the fridge.

I’ve made the pizza dough, pancakes (would be better as waffles), and biscuits … the biscuits are fucking knock out man … so damn good.

In fact, this is a very old model. Josef Stalin created ANTIFA in the early 1930s to destroy the German Wehmar Republic. (Same flag and everything.) They were so bad people looked the the Nazis as a stabilizing influence.

My dog sheds an incredible amount. Like he holds the genetic code to regrowing hair. And its white so its easy to see. Well, Ive been growing a sweet quarantine mustache and now i constantly have white dog hair in it all the damn time. Just a couple white hairs always hanging out in the bottom of my peripheral vision… i wipe them off and 5 minutes later i notice i somehow have picked up more dog hair in my stache.

the mustache might be more PITA than its worth at this point.
