I think you have this reversed. The syrup traps were designed to keep the syrup from running off the plate, because most of those trailers are not properly leveled thus resulting in syrup running in the direction of the low end of the trailer.
BTW, that is also why people who live in trailers don’t close doors behind them. Due to growing up in a trailer that leans they are acustomed to doors swinging shut on their own. That goes for people who were raised on a hill as well.
