Most of those smoke point temp charts are accurate, so I’d stick with that.
I did notice that olive oil smokes at 375*F, higher than coconut oil, and so far that has held true based on the temps I use to cook with (candy thermometer)
Most cooking will help stop the majority of damage to the oil if you add food to it, especially foods that soak up the oils like veggies, scrambled eggs, grains because they heat up and expel water, which absorbs a ton of heat.
Just don’t burn food and you should be good.
I would recommend ghee like others have, its amazing stuff and if you burn that you fucked something up bad haha.
Low temp oil infusions work too if you want to avoid high heat with certain oils. I’ll get a 1-2qt pot and put 4-5 cloves of garlic that are sliced in half horizontally in with a half bottle of olive oil and heat at 1 or lower for about 90 minutes (small boiling bubbles from garlic, about as big as soda bubbles). You should be able to stick your finger in the oil quickly and not burn yourself, same with coconut oil and herbs, run through a cheese cloth and you have flavorful oils that don’t need to actually cook at high heat.
