The first few days of dieting despite losing a little scale weight always seem to make me look fatter than before. The fat also always seems to get a lot softer. Any explanations. Does this happen to anyone else?
What is your diet like? It’s hard to tell based on what you’ve posted. How much carbs are you taking each day? etc

The first few days of a diet, you are losing nothing but water weight. That water is mostly coming from muscle tissue. That means, in effect, you are losing muscle size while keeping much of the fat you have. This would make anyone look “fatter”.
