What I do with beef can also be done with lamb but similar to your method(can you eat dairy products?) In middle of the cooking process I put a piece of butter in the pan to cause it to foam and baste the meat with it, it makes it crispier and delicious.But I eat my meat medium rare/rare. Here’s an example.

Recipes look great! I’ve mostly been eating lamb loin since they’re so great for grilling but I will def pick up a rack of lamb and try the herb crusted lamb.

[/quote]Yeah, that’s what I do too (Except add some ghee in to the mix and take out the pepper) you can try substituting oregano for the rosemary too.
None of you guys have mint jelly with your lamb? Man that’s good stuff.
