Sweet! Did you make them, or do they sell those over there? I’ve made red wine “caviar” before, but never balsamic… I’ll have to experiment!

Made them myself! Put some EVOO in the freezer (45-60 minutes) in a glass (a beaker would do fine but I don’t have one).

After those first 45 minutes, I brought 1/2 cup of balsamic vinegar paired with 2-3g (my scale doesn’t really react until at 3g…) of agar-agar powder to a boil (make sure to run a fan, geez vinegar reeks when cooked).

Brought the EVOO out from the freezer.

I put the hot liquid in a (plastic :frowning_face:) syringe and then held the syringe horizontally over the EVOO. The liquid kind of dripped out on its own, and formed these nice pearls as they fell to the bottom.

Poured the EVOO and pearls through a steel sieve into a container so that I could reuse the EVOO and set aside the pearls that I didn’t use for a later date :slight_smile:

One could probably use tapioca and soy to make “caviar” as well. These pearls don’t really come across as “caviar” unless you group it together, but then you only get the visual quality of caviar, as it doesn’t behave as caviar as it isn’t very “clingy” because of the oil.

I wash them, then make tiny holes with a knife, put them onto a plate and into the microwave.

10 minutes on high and they are ready. Very quick and convenient and yes, they taste great!

The markets in Bangkok are fucking awesome too.

I was in Chiang Mai the last few days. I just got to an island last night.
