I’ve had camel before and it tastes like very musky lamb, but with a stringier/tougher texture

I wasn’t the biggest fan.

I don’t like camel either. I tried putting it through a grinder once and it was so stringy that it clogged the grinder up.

I’ve gotten hooked on “Max the Meat Guy” on youtube, among other channels. They’ve described camel as tasting like how a barn smells. It’s one of the few animals I’ve crossed off my list without having actually tried it.

I just realized Bison have filets. That would be a giant awesome steak!

On that note, today we experimented with wings as well

Dry brine, duck fat spray, Greek seasoning and air fryer. Delicious skin. And the bark on the rib was insane.

My meat shipment is going to be delayed by a day (UPS problem)

When you worked in restaurants, did anything like this ever happen? If so, should I be worried about spoiling?

Normally they’re shipped either frozen, or in an insulated container with ice packs, so you should be fine.

If you’re paranoid you can temp it when it arrives.

I finally got around to trying @Brant_Drake s smoked caprese salad. The tomatoes were amazing. The mozzarella did not. I put it in too early and it got gummy but that’s 100% my fault because I’ve never worked with mozzarella before. He also said to use burrata but grocery order swapped it out to mozzarella

Overall, I’m making this again when I have the smoker going

Whenever I get meat, it is packed in dry ice.

Fun fact: the instructions say to just leave the dry ice outside and it will dematerialize.

Funner fact: this does NOT work in winter in Northern North Dakota, where it can get to -72 with windchill. My dry ice stayed solid for 3 days…

so safe to say I’d have to get it marinaded and stuff when I get it bc it’ll no longer be frozen or can I refreeze.

One day delayed shipping shouldn’t really make a difference unless it sat in a warehouse in Florida or something.
