I like using the griddle to get a good inner food stuff roll.

Then dress the inside of the shell with what ever goodies.

Typically sour cream, some kind of cheese, and what ever herbs & spices I’m into that day.

I really like the thin sliced capocollo, hot or sweet.

So you do the inners separate and then wrap them in a shell? Or are those pictures of 2 separate kinds of wrap?

I do the inner, and have the shell prepped on the side.

Once the inner is rolled, I slide it to the rear of the griddle (less hot. My front is work area, back for warm holding),

Then throw the prepped shell on the front and roll the egg up in the shell.

Then toast shell to desired toasty crispness.

I set a lid on the shell cuz a little pressure helps uniform toastiness.

Thanks for the tips. I will give this a shot. Probably a mini version for breakfast. Getting tired of plain breakfast burritos.

Yeah! They can be scaled to small (1 egg) med. (2 egg) & large (3 egg), depending on shell & who you’re feeding.

For 1 egg or even 2 I like to do the pockets with the smaller shells.

I think that one is fried mozz & a small burger.

That aside, I agree. I do know of a couple farms nearby that I could source from. And my one buddy from growing up that owned and operated a few restaurants did just comment that I need my own little deli to make this stuff and sell it from.

He grew up with my dads cooking (which was also very good) and partly credits that with his direction in life.

I still watch a few games here and there. It’s just different now. They had such a ridiculous lineup. Lemieux was just freakin incredible to watch.

Yeah. He was pretty awesome. Jaromir Jagr was amazing too! I had a friend who was obsessed. Her entire room was covered in Penguin posters. She never missed a game. I was more of a peripheral fan. Lol.
