Does Cooking Affect Protein Content of Food?

im gonna just start weighing out 8oz portions to get the 6oz i trully need.

not really. perdue facts on the plastic wrap say

26g protein for 4oz or raw chicken
21g protein for 3 oz cooked

8oz or raw= 52g protein, when its cooked it shrinks down to 6oz which = 42g protein.

the reason im streesing so much is because im on a calorie deficit right now and im trying to be strict and not go over. [/quote]

I was thinking about this this morning before I went to sleep (night shifter here) and I thought to myself, “Self- isn’t 5g about a teaspoon? It sure is!!”

What I’m trying to say is this- do you see anywhere in the pan after cooking where you have a teaspoon of stuff left in the pan? I know I don’t. It’s usually a little salt and pepper and a little oil left in the pan.

I’m not really sure how perdue came up with these calculations and I could be totally wrong here. They might have counted the loss of 5g as protein degradation- lol but I doubt that’s the case.

It could be that they determine protein % per pound of chicken. In which case- to make it easy- when the chicken shrinks after cooking they weigh it again and multiply the %protein x weight of chicken.

Whatever the case- this is just a rant. I hope you just eat the chicken and don’t worry about the 20 or so kcals which the food may or may not have lost.

The amount of stress you place on your body from worrying about minute things like this in your diet might probably produce poorer results from your training than if you had just gave yourself a little slack.
