Can anybody recommend any good chess books for beginner/intermediate? Maybe one that covers concepts and strategy instead of specific tactics. I’d like to be able to read it on a plane. Not necessarily a book that I would have to have a chess set next to me while I’m reading it.

It really depends on how strong your game and visualization is. A lot of books go through games without illustrations, so for most people, having a board next to them is a good idea.
The Immortal Game was a fascinating read about the history of chess and I would definitely recommend it for travel reading. It doesn’t touch much on game play or strategy but it does cover Anderssen and Kieseritzky’s “Immortal Game” move-by-move.

“My System” by Aron Nimzowitsch is a pretty easy read.

I would prefer something more modern like Pachman’s “Modern Chess Strategy” to Nimzo, but he was quite a character and “My System” is certainly worth reading.
Remember that you can’t master strategy unless you’re tactically sharp, don’t ignore books on tactics and combinations.
