3.5mg anastrozole per week should be more than enough for 250mg test cyp/eth per week.

If injecting T twice a week, take anastrozole at that time, not EOD, T and serum anastrozole levels will roughly track each other.

Anastrozole EOD or ED with one T injection per week would be bad.

Any joint aches indicative of low E2?

So using one injection per week what would you recommend if using exemestane?

Exemestane biological half-life is 24 hours. So worse than anastrozole when doing T injections once a week. Injecting T once a week is not a very good protocol. Try as I have suggested and see how you feel relative to once a week. It will take a few weeks for your brain to adapt once off of the roller coaster.
